Express oatmeal cookies with chocolate

Who doesn't love cookies, especially after lunch when you want something sweet... when I was in England, they used to look at me from every shop window, teasing me, but I have to give myself credit because I always resisted them! Well, how did I do it? I imagined what they contained... white flour, a ton of butter, a ton of sugar. Nothing healthy, huh? That's why I got the idea for these oatmeal cookies, which taste (almost) better than English muffins and are totally easy and quick to make! :)

Ingredients we will need (about 11 pieces):

  • 1 cup of ground oatmeal
  • ½ cup ground coconut
  • ½ cup white yogurt, 1 egg
  • 2 teaspoons honey, handful of raisins
  • 1 and ½ cubes 81% chocolate (Lidl)

 

Procedure:

  1. These cookies are very quick and easy to prepare . In a bowl, mix the ground oats and coconut, add the white yogurt, egg, a handful of raisins (or otheror any of your favourite berries), honey and finally the chocolate, which I cut into small pieces with a knife. Choose chocolate with as little sugar as possible and as much cocoa solids as possible. My favourite is 81 from Lidl.
  2. This makes a malleable, wet dough, which we use to make pieces, which we then roll into balls and shape into a biscuit. This works really well, the edges don't crack and the dough is beautifully elastic. Transfer the biscuits to a baking tray lined with baking paper and bake at 180°C for about 12 minutes until golden brown.
  3. Once cooled, the biscuits are crisp on the outside and soft on the inside. They are ready in one go and you will see that they will be tasty even for those who wouldn't take anything healthy in their mouths! :)
