Even though the holidays are over and the Christmas cheer and decorations have disappeared from many homes, that doesn't mean we can't "take it easy" and switch off.
Switching off for me means putting on a favorite show or picking up a favorite book and "noshing" on something healthy and good. Well, that's what today's recipe is all about.
Today we're going to make an unpretentious classic in a healthier version that you can finish before you take a bath after a hard day. That classic will be oatmeal gingerbread without added sugar.
Yes, you read that right - no added sugar! We'll be sweetening with dates, which despite their sweetness do not raise blood glucose levels, lower blood and contain a high percentage of various amino acids, magnesium, potassium, iron and vitamins. All this combined with a subtle gingerbread taste and the feeling of a full tummy after just two bites!

Ingredients:
- 200g of ground oatmeal
- 2 eggs
- 2 white yoghurt
- 10 dates (for those who hardly eat dates, for others I recommend more)
- 3 tablespoons of cocoa
- 1-2 tbsp gingerbread baking powder, cinnamon
Procedure:
- Pour boiling water over the dates and let rest for 10 minutes.
- In the meantime, mix the oats, cocoa and gingerbread baking powder in a bowl.
- Once the dates have loosened, blend them with the two white yogurts and then add them and the eggs to the dry ingredients.
- Mix the batter well and pour into a baking paper lined tin (I use 23x23cm).
- Bake for 20 minutes at 180°C.
