This beautiful and short month has been a month of celebration in our family - many members (including me!) has a birthday, so I thought I'd make everyone a healthy treat that might make them happy.
When my mom brought in these tartlet molds from Tchiba last week, the choice was obvious :). So today it's going to be these little cupcakes filled with happiness, oatmeal, cottage cheese and berries. :)
Ingredients (for about 9 pieces):
Batter:
- 50g of ground oatmeal
- 50g coconut
- 10 dates
- 1 egg
Filling:
- 1 tub of non-fat cottage cheese
- Milk for dilution
- 2-3 teaspoons honey (or other sweetener)
For garnish:
- Forest fruits
- 1 cube of high-percentage chocolate
- Almonds or any other nuts
Procedure:
- Pour boiling water over the dates and leave to infuse for 10 minutes.
- In the meantime, mix the ground flakes and coconut in a bowl. Mash the dates with a fork to a paste and add them and the egg to the mixture. This will make a wetter batter that is easy to work with.
- Preheat the oven to 180°C and prepare the tartlet tins. Then use your fingers to press the dough into them. If you have silicone moulds, you don't need to grease them, if they are made of another material, I recommend greasing them with coconut oil or butter. I made 9 tartlets with the dough.
- In another bowl, mix a tub of low-fat cottage cheese with milk to make a smooth cream. Then add 2 teaspoons of any sweetener (the cream will be less sweet) and mix well. I added a few drops of vanilla essence to complete the flavour.
- Now just pour the cream into the tartlet tins and bake for 15 minutes, until the edges of the tartlets are golden brown.
- Once the tartlets have cooled, you can decorate them with any fruit you like, either frozen (like I did) or freshor chocolate, nuts, oatmeal, coconut... your imagination can run wild! :)
Now all that's left is to enjoy the tartlets and I'll add the nutritional values at the end :

- 93kcal/390kJ
- 3.7g protein, 8.8g carbs, 4.5g fat, 1.9g fiber
