Clarified butter is known as ghee in India, but it could also be called clarified butter. Traditional butter is gradually heated and strained in a water bath until the water and other impurities are removed. This traditional process produces pure fat. The process can take up to 10 hours. Well stored ghee will last for months and has a higher refatting point than ordinary butter.
